I'm very late to this thread!
I can't stand the thought of chewing flesh -ewwww- and have been this way ever since anyone in my family can remember.
I don't even know what a hamburger tastes like. People tell me it tastes nothing like my Morningstar Farms Grillers though.
I certainly think the grocery bill at my house would be less if we didn't have to buy meat for these carnivores here.

    Baked Mashed Potatoes

    What you'll need:
    4 large Russett (baking) potatoes
1 8 oz package of sour cream
1 cup of finely shredded cheddar cheese
Butter (as little or as much as you like for taste)
    Salt, pepper

In a large pot, fill about half way with water - bring to a boil
While water is heating up, peel potatoes. Rinse to make sure there are no specks of dirt left on them. Cube potatoes about a half inch around so that they cook evenly. Drop potatoes in the water and cook until they are cooked all the way through. Drain water, and place potatoes back pot. Mash potatoes however soft or lumpy you like them. Add butter and stir in. Then add sour cream, and stir in so that it is evenly distributed. Next stir in 3/4 of a cup of cheddar cheese so that it melts in. Add pepper and salt to taste.

Place in an oven safe container that has a lid. Add the left over cheese to the top of the mashed potatoes. Put lid on top, and place in a pre-heated 350 degree oven for about 10-15 minutes. This will make the cheese melt on top, and nice and warm!

You can make the potatoes long before you want to eat them, so if you don't plan on eating them right away, put the container in the fridge. Once you're ready to heat them, place them in the oven with the lid on for about 20 minutes. This will melt the cheese on top, and any of the cheese that didn't melt before.

    Enjoy :)

Meatout is coming up! This is the first time I've ever heard of this, but here's the info!

On (or around) March 20 — the first day of spring — thousands of caring people in all 50 U.S. states and two dozen other countries get active to host educational Meatout events. Activities include colorful festivals, lectures, public dinners, feed-ins, cooking demos, food samplings, leafleting, information tables and more.

The occasion is Meatout, the world's largest and oldest annual grassroots diet education campaign. This year is the 25th annual observance! Every spring, thousands of caring Meatout supporters educate their communities and ask their friends, families, and neighbors to pledge to "kick the meat habit (at least for a day) and explore a wholesome, compassionate diet of fruits, vegetables, and whole grains."

This year's theme is "Change Your Diet - Change the World!

Click here for more info on Meatout & to find events near you!

I actually found on the list of events a local college that is having a vegan/vegetarian potluck dinner on March 19th, so my sister (she's a vegetarian too) and I are going to attend!

Me neither. I am "weak" when it comes to food. I have actually thought about it. I remember when I was little my mom got into it and we would never eat meat. She would make burgers and spaghetti with soy. I remember her telling us it was not ground beef but it tasted like that, I remember telling my mom how yummy it was. A girl I used to work with became vegan (I don't know if is different than vegetarians), she lost so much weight in a couple of months that I wanted to do the same I failed, miserably, but I did cut my consumerism. We know longer eat red meat (expect when we eat pizza or in&out).

Thank you all for sharing those nice recipes. I am going to try that granola bar recipe, I love nuts and dry fruits.

Thought I would bump this thread.

Does anyone have any good recipes for Chowder. - potato, corn, vegetable... any kind. The recipe can be for any chowder, just and long as it could easily be turned into a vegetarian option.

    Thanks!

FU when you had children how did you and your husband decide about giving them meat or not? Is he a vegetarian also?

I was just wondering because I'm sure I will still be one when I have kids one day, but my bf is a meat man, so I'm sure he will not want the kids to be vegetarian. Obviously it will be a while before any of this happens, but I thought it would be cool to get your input on the whole thing :)
