So dinner was from Central Market. I had a big bottle of Fugi water and a 3 pack of sushi rolls. And then I jsut finished a frozen lime bar (organic) and am obsessing over the peanut butter cookies in the pantry.

Okay...theoretically I would like to have Chicken and rice...but I think it's goign to be that I call my husband at 5pm and tell him to get him and his son Sonic
Then, I will probably eat a Hot Pocket or an Oscar Meyer Deli Select sandwich when I get home at 9...

Why do I have this sudden craving for meatballs? Ah man! LOL! Problem is, I would need veal in order to make good ones. ::sigh:: Oh well, I guess I won't be doing that tonight... its already 6pm.

I just made a Warm Rice & Edamame salad for dinner. It is amazing and SO FAST!!! Here's what you need to do to make it - just mix the following:
- 1 cup brown rice
- 16oz package of edamame
- 4oz feta cheese
- 1/2 cup of dried cranberries
- 20 pitted and halved kalamata olives
- 3 tbs cilantro
- 2 tbs lime juice
- 1 tbs olive oil
- 1/2 tps red pepper flakes
it's so good - it has this sweet and spicy kick to it!! i got it from vegetarian magazine. even the boyfriend loves it.

Baked chicken, baked potatoes and salad. I was a very strict vegetarian who only eats seafood but I cheat every now and then. I'm going back to seafood tomorrow, girls. I actually was a vegan for a little while but that is super hard. I haven't eaten red meat or pork in 2 years. Yay for me! I lost 20lbs in 1 month when I cut out those meats, although I did it because of the cruetly to animals, but that was a plus. Yay!
