I've made the galette recipe a few times already and my fave fruit to use is definitely apples but you can use whatever fruit you like. Fresh fruit versus canned seems to come out the best in just about all the dessert recipes I've tried
Sorry I only have a pic of the dessert handy and not the quinoa edmame tabbouleh. Trust me when I say the quinoa is so so yummy and healthy! I've made the quinoa a few times already and totally love it.

Here is another dessert that is TDF, especially if you are using fresh versus canned cherries ! I've updated this post with my own pics (first three are mine). I love cast iron recipes. The third pic features the clafoutis that tasted the best (fresh cherries). I usually serve it with confectioner's sugar sprinkled on top after it has cooled enough. Homemade whip cream goes well with it too.

Those pies look delicious! I've also always wanted to try quinoa. My best friend is a vegan and says it's a complete protein.
I will post recipes later.

Avocado - banana smoothie:
Ingredients: half an avocado, half a cup of 1 % milk, half of a banana, a few pieces of ice, a little bit of agave (optional, you need this if your banana isn't ripe).
Throw it all in a blender. If you want a thinner smoothie (it's a little thick) add a little bit more milk.
Vanilla blueberry smoothie:
Ingredients: 2.4 oz blueberries, half a cup of 1 % milk, half of a banana, 24 g creamy vanilla whey protein ( substitution: about half a cup of Greek vanilla yogurt).
Throw it all in a blender.
My Infamous Guacamole:
Ingredients: 2 avocados, 1 oz white diced onion, 1 dice garlic clove (or used a bit of garlic powder if you don't like it hot, raw garlic cloves are very hot), 1 deseeded jalapeno, and 1.5 oz chopped tomato. [This makes quite a few servings, like 6 but it goes quickly, trust me!]
Peel the skin off the of the avocados; mash them up in a bowl. If you have a food processor I suggest throwing the onion, garlic, jalapeno, and tomato in there to really get it diced up (If you don't, it's fine as long as you chop it up small enough). Lastly, mix the onion, garlic, jalapeno, and tomato into the mash avocados. Enjoy! I prefer blue-corn flax seed tortilla chips.

Here is the recipe for the healthiest drink on earth!!! This recipe has acai, which is the big rave these days. This will give you natural energy and is loaded with Anti-oxidents and vitamins. I will usually drink this once a day (sometimes twice lol).
* 1 package dry chocolate chip cookie mix (about 16-18 ounces), found on baking aisle
* 7 tablespoons softened butter
* 1 large egg, beaten
* 4 tablespoons Kahlua or other coffee liqueur
* 3 tablespoons instant espresso or instant coffee crystals
* 1 tablespoon ground coffee beans
* 1 cup bittersweet chocolate chunks, such as Ghiradelli brand
* 4 ounces walnut pieces
Pre-heat oven to 375°F.
Place racks in center of oven. In a mixing bowl, make a well in the center of dry chocolate chip cookie mix. Add softened butter, egg, Kahlua, instant coffee and ground coffee, chocolate chunks and walnuts. Mix well to combine all ingredients into cookie dough.
Scoop with a small scoop or by heaping tablespoons and drop cookies two inches apart on an ungreased nonstick cookie sheet or sheets lined with parchment paper. Bake cookies in batches for 9-11 minutes or until crisp and browned at edges. Transfer to wire rack to cool and serve.
